Feta and Black Grape Stuffed Peppers

These cheese-stuffed capsicums topped with black grapes make healthy snacks or delicious canapes.


  • 3 capsicums of any colour
  • 1 cup green seedless grapes, quartered
  • 1 cup feta cheese, crumbled
  • 5 tbsp light cream cheese
  • 2 tbsp fat free milk
  • Dash cayenne pepper
  • 1 tbsp thinly sliced green onions
  • ½ tsp finely snipped fresh rosemary


  1. Quarter and seed the capsicums. Set aside.
  2. Quarter the green grapes and set aside.
  3. In a food processor, combine feta, milk and cayenne pepper. Process until smooth.
  4. Fold green onion and rosemary into feta mixture.
  5. Fill each pepper with the feta mixture and top with more green seedless grapes, additional rosemary and/or cayenne pepper to taste.
