Fruit Pizza with Cream Cheese Icing

This pizza-sized, fruit-topped biscuit looks and tastes like summer.



Biscuit Base:

  • 1/2 cup unsalted butter, diced
  • 3/4 cup sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp bicarbonate of soda
  • 1/2 tsp baking powder
  • Pinch of salt
  • 1 1/2 cups plain flour


  • 225g cream cheese
  • 1/4 cup unsalted butter, diced
  • 1 tsp vanilla extract
  • 3-4 cups icing sugar


  • Black grapes, sliced
  • Strawberries, sliced
  • Kiwi fruit, sliced
  • Blueberries
  • Raspberries


  1. Preheat oven to 180˚C. Line a baking tray with baking paper.
  2. In a bowl, mix together the biscuit base’s flour, bicarbonate of soda, baking powder and salt. Set aside.
  3. In another bowl, add the sugar and butter for the biscuit base and beat for a couple minutes until light and fluffy. Add the egg and vanilla extract and continue mixing until the egg is fully incorporated.
  4. Add the flour mixture and mix for an additional two minutes.
  5. Take the biscuit base dough and roll it into a ball. Roll the ball into a large round and flat shape, resembling a pizza base. Add flour as needed to prevent sticking. The base should be at least 0.5cm thick.
  6. Bake for 12-15 minutes or until the edges are golden. Let the biscuit base cool completely.
  7. In the meantime, beat all the icing ingredients in a mixer. Add more icing sugar, if needed, until you get the desired consistency.
  8. Once the biscuit base has cooled, spread the cream cheese icing on top. Pop any you don’t use into the fridge.
  9. Arrange the grapes, strawberries, kiwi fruit, blueberries and raspberries on top in any design that takes your fancy.
