Italian Flat Bread with Black Grapes (Schiacciata con l’uva)

Say ciao to this authentic Italian recipe that’s easy to make and a lip-smackingly delicious combination of saltiness and sweetness.


  • 1kg black seedless grapes
  • 340g flour
  • 28g yeast
  • 8 tbsp of sugar
  • 8 tbsp of good-quality olive oil


  1. Rinse, pat dry and slice the black seedless grapes in half.
  2. Put the yeast in a bowl with some luke warm water (about 3/4 of a water glass).
  3. While mixing, add flour, half of the oil, half of the sugar and a little pinch of salt.
  4. Let the mixture rise for about one hour in a warm place such as near your stove, outside or in a garage on a warm day.
  5. After an hour, roll the dough out thinly.
  6. Take a baking dish, pour a little oil in it and spread it all over. Then put the dough inside. Don’t worry if the dough is wider or longer than the dish, just let it hang for now and do not cut it.
  7. Pour about 3/4 of the sliced grapes on top.
  8. Then, sprinkle 2 tbsp of sugar and drizzle 2 tbsp of oil over the grapes..
  9. Cover the grapes, sugar and oil with the exceeding dough and push the remaining grapes into the top.
  10. Drizzle with the remaining oil and sugar.
  11. Put the bread in the oven at about 180ºC for about one hour.
  12. Enjoy!
