Kale With Oven-roasted Red Seedless Grapes, Walnuts, and Blue Cheese

You will find amazing flavours and textures on this kale salad, thanks to the crunchy walnuts, sweet red seedless grapes and blue cheese.


  • 1 bunch of kale, finely shredded
  • 2 cups (340g) Sun World red seedless grapes
  • 3 tbsp (50g) honey
  • ½ cup (75g) walnuts
  • 100g blue cheese
  • Juice of 1 lemon
  • 3 tbsp olive oil
  • 1 tsp Dijon mustard
  • Sea salt


  1. Preheat oven to 200° C.
  2. Place the grapes on a paper lined baking tray before drizzling them with honey and a sprinkle of sea salt. Place in the oven and cook for 15-20 minutes, or until slightly wrinkled and softened.
  3. Place the walnuts on a second tray and roast in the oven for 5-10 minutes, or until lightly golden.
  4. Meanwhile, make the dressing by whisking together the olive oil, Dijon mustard and lemon juice until combined. Pour over the shredded kale and massage well into the leaves.
  5. Toss the kale with the walnuts and grapes, followed by crumbling the blue cheese into the mix and tossing once more. Enjoy!
