Pan Roasted Chicken Breasts with Green Grapes and Tarragon

Enjoy this unique take on pan roasted chicken breasts featuring yummy green seedless grapes and chopped tarragon.


  • 4 boneless chicken breasts 

  • 2 tsp salt
  • ½ tsp pepper

  • 3 tbsp olive oil

  • 2 tbsp chopped shallots

  • 10 green seedless grapes, sliced
  • ¼ cup dry white wine
  • 3 tbsp chopped tarragon

  • 1 ½ tsp chopped parsley

  • ½ cup cream

  • 1/2 tbsp honey

  • 1 tsp salt

  • ¼ tsp pepper


  1. Heat oven to 200ºC.
  2. Season chicken breasts with salt and pepper.
  3. Heat an oven safe frying pan to medium high and add oil.
  4. When oil starts to lightly smoke, place chicken breasts skin side down.
  5. When skin is golden brown on the edges, gently turn each breast over and place the pan in oven.
  6. Cook for 8 to 10 mins.
  7. Remove the hot pan from the oven and set chicken breasts aside on a plate.
  8. Place the pan back on the stovetop on a medium heat.
  9. Sauté the shallots until golden and then deglaze with the wine for 1 min.
  10. Add the green seedless grapes, tarragon, parsley, cream, honey, salt and pepper.
  11. Reduce heat and remove from the heat once the sauce has thickened.
  12. Place the chicken breasts skin side up in the centre of each plate.
  13. Spoon a little sauce and grapes over each piece of chicken.
  14. Enjoy!
