Health Nut Muffins

These health nut muffins with red seedless grapes make for a delicious breakfast snack.

Ingredients

  • 4 cups self-rising flour
  • 3 cups quick oats
  • 2 cups brown sugar, packed
  • 1 cup natural wheat bran
  • 3 ½ tbsp baking powder
  • 2 tsp cinnamon
  • 2 tsp allspice
  • 1 tsp salt
  • 3 cups red seedless grapes (sliced)
  • 2 cups grated carrots
  • 2 cups skim milk
  • 1 1/3 cups apple sauce
  • ¾ cup vegetable oil
  • 4 eggs, beaten
  • 2 cups walnuts, chopped

Directions

  1. Preheat oven to 180ºC. Line 40 muffin tins with paper liners.
  2. Combine dry ingredients in a medium bowl; mix well.
  3. Add remaining ingredients, reserving 1 cup walnuts. Stir until just combined.
  4. Spoon into prepared muffins tins. Sprinkle with reserved walnuts.
  5. Bake for 20 to 25 mins. Allow to cool in tray for 5 mins, then cool completely on a wire rack.
  6. Store in an air tight container.
  7. Enjoy!
