Easy Gluten-Free Red Seedless Grapes and Peanut Butter Muffins

Try these healthy “at home-cooked” muffins, and include them to the kids lunchbox.  They’re guaranteed not to bring back home!

Ingredients

  • 2½ cups (350g) gluten-free all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 2/3 cup sugar
  • 8 tbsp (115g) olive oil
  • 2 large eggs
  • 1 cup (250ml) Greek yoghurt
  • 1½ cups milk
  • 1 cup (170g) Sun World red seedless grapes (frozen is fine)
  • Peanut butter

Directions

  1. Preheat the oven to 180°. Line a muffin tin with muffin papers.
  2. Mix together the flour, baking powder, soda and salt in a bowl. Set aside.
  3. In another bowl, whisk together the olive oil and sugar until well combined, then add the eggs gradually, followed by the yoghurt and milk.
  4. Add the dry ingredients to the wet, and mix until thoroughly combined. Add the grapes and fold them into the batter with a spatula.
  5. Spoon the batter into the prepared muffin tin, filling each liner 3/4 full. Press a spoon of the peanut butter into the centre of each muffin. Bake the muffins for 25 minutes, or until lightly golden and springy.
  6. Remove from the oven onto a cooling rack and enjoy slightly warm or at room temperature.
