Green Grapes & Brie En Croute

Take this starter to dinner parties and other gatherings to impress your friends.

Ingredients

  • 230g. whole or wedge of brie
  • 1 sheet of frozen puff pastry
  • Approximately 6-8 green seedless grapes (sliced)
  • 1 tbsp light brown sugar
  • 1 egg
  • Honey for drizzling
  • 2 tbsp crushed pistachios
  • 1 crusty French baguette sliced thin (for serving)

Directions

  • Heat oven to 200°C. Thaw puff pastry in refrigerator.
  • Slice the green seedless grapes into thin slices (approximately 6-8 slices per grape depending on the size of the grape).
  • Top the brie with two layers of the sliced grapes (laying them flat, touching each other) covering the entire top. Sprinkle the grapes with the brown sugar.
  • Lay out the puff pastry on a chopping board lightly dusted with plain flour. Cut the puff pastry so that it’s big enough to completely cover the brie and slightly overlap.
  • Drape the puff pastry over the brie. Pull the puff pastry all the way down the sides and under the brie. It is very important to press the puff pastry on the bottom together to form a seal.
  • Mix the egg with one teaspoon of water and beat.
  • Brush the puff pastry with the egg mixture. Make sure you completely cover the puff pastry, including the bottom, to help seal it).
  • Bake the brie on a lined baking tray for 18-20 mins until browned.
  • Let cool for about 10-15 mins. Drizzle with honey and sprinkle the pistachios on top. Serve with a crusty baguette.
