Chicken Waldorf Salad With Fennel, Oven-Dried Grapes, And Spicy Walnuts
Add crunchy walnuts and sweet grapes to this classic salad.
2 tbsp unsalted butter, melted
1/2 tsp cumin
1/2 tsp paprika
1/4 tsp cayenne
1 cup (100g) chopped walnuts
2 cups (450g) cooked chicken breast, shredded
2 apples, sliced
2 sticks celery, sliced
Juice of 1 lemon
2 cups (300g) SABLE SEEDLESS® brand black grapes
1 small bulb fennel, core removed and finely shaved
1/4 cup mayonnaise
Preheat oven to 200°C. Mix half the melted butter, cumin, paprika and cayenne in a small bowl. Add walnuts and toss to coat. Spread on a paper lined baking tray and roast in the oven until golden, about 10 minutes.
Meanwhile, toss half of the SABLE SEEDLESS® brand black grapes with remaining melted butter. Spread in single layer on foil-lined baking tray, pinching up the corners to catch the juices. Bake in the oven until softened and wrinkled around the edges, 10 to 12 minutes.
In a bowl, combine the chicken, remaining SABLE SEEDLESS® brand black grapes, fennel and fennel fronds in a bowl. Toss apples thoroughly with lemon juice and add to the bowl.
Remove the grapes from the oven and add them to the bowl, along with the walnuts and mix everything together.
Spoon the mayonnaise into the salad and toss well. Serve on its own, or on bread.
