Make a twist of a traditional winter crumble with the addition of some flavoursome seedless grapes.
3 cups (500g) SABLE SEEDLESS® brand black grapes
1 tbsp lemon juice
1 cup (200g) sugar
2 tsp thyme, chopped
½ cups (100g) plain flour
¼ cups (75g) caster sugar
1 tsp ground cinnamon
½ cup (45g) rolled oats
⅓ cup 50g flour
70g butter, melted
Blend one cup of the grapes in a food processor.
In a pot combine blended grape pulp, lemon juice, the remaining whole grapes and the sugar. Bring to boil over medium-high heat, then reduce heat to medium low and simmer for 15 minutes. Add thyme and continue simmering about 15 minutes more, stirring frequently, until mixture is reduced and has thickened. Remove saucepan from heat and transfer to cool in a ceramic baking dish.
To make the crumble topping, place the flour, sugar, cinnamon, oats and butter in a large bowl and mix until just combined.
Spoon the crumble mixture over the grape mixture and place the dish on a large baking tray. Bake for 40–45 minutes, or until the crumble is golden.
